These are easy enough that the children can help you.
The first is a recipe for Peach Granita (aka Italian ice). It’s a great way to use peaches as they’re currently in season, and it’s relatively low in sugar.
You’ll need;
5 peaches, peeled and roughly chopped
Juice from 1/2 a lemon
1/3 cup sugar
1/2 cup water
1/4 tsp. vanilla extract
In a small skillet stir the sugar and water then cook over medium-low heat till boiling, while stirring regularly (this is called simple syrup). Once the simple syrup has started to boil, turn off the heat and set aside to cool slightly. In a blender add the peaches, simple syrup, lemon juice, and vanilla then puree till smooth. Pour peach mixture into a cake pan (size doesn’t matter as long as it’s large enough to hold the mix) and put into the freezer. After 30 minutes, stir with a fork breaking and smashing any frozen clumps then put back in the freezer. Check and stir every twenty minutes till mixture is no longer liquidy, it’s okay if it’s slightly slushy. Makes about four to six servings depending on how you portion it.
